Recommended Starting Roast: Light to Medium
A lighter roast is a great starting point for preserving the strawberry, raisin, and tea-like character that make this coffee distinctive. Moving toward medium will build more body and bring the cocoa and nutty sweetness forward while still retaining much of the fruit.

Roasting Notes:
At a light roast, expect more floral and fruit-driven character, with strawberry, raisin, and tea-like notes showing clearly alongside a lighter body. Moving into light-medium brings more sweetness and balance while keeping the natural-process fruit character prominent. At medium, cocoa and nutty notes become more noticeable, the body fills out, and the fruit becomes softer and rounder. Taking this coffee much darker will reduce the delicate fruit and aromatic character, so we recommend staying in the light-to-medium range if you want to highlight what makes this Sidama coffee unique.
