Recommended Starting Roast: Light-Medium to Medium
Starting on the lighter side helps preserve the honey sweetness, raspberry character, and bright acidity. Moving toward medium builds more body and brings the milk-chocolate sweetness forward while keeping the cup balanced and lively.

Roasting Notes:
At a light-medium roast, expect the raspberry and bright fruit character to stand out with a lighter body and more noticeable acidity. At medium, the cup becomes rounder and sweeter, with honey and milk chocolate becoming more prominent while the fruit remains clearly present. Moving toward medium-dark will reduce the acidity and develop deeper chocolate and caramelized-sugar notes, but some of the delicate fruit character will begin to fade. For this coffee, we recommend staying below a darker roast if you want to preserve what makes the honey process and Tarrazú origin distinctive.
